Food Presentation
The presentation of the food is crucial for the guests’ feelings and perception. Here you will find our tips.
Think of the size and scope of your dishes
- Reduce portion and plate sizes at buffets, with more regular replenishment (this reduces waste) and emphasise quality over quantity. Smaller plates also provide greater guest satisfaction: it’s much easier to make a smaller plate look full.
- Create a culinary adventure for your guests by attractively showcasing your sustainable offerings: Incorporate colourful and fresh ingredients.
Highlight particularly sustainable dishes
- Arrange the buffet so that more sustainable dishes are at the center of the buffet.
- Present as many vegetarian and/or vegan alternatives as possible.
- Set up special areas, such as a table with organic products and/or regional, seasonal specialities.
- Vary the colours and textures of dishes and use complementary colours, red peppers in green pea soup, etc. This will make the dishes look attractive and attract guests’ attention.
- Place great emphasis on aesthetic appeal and decoration of the dishes.
Create a pleasant dining atmosphere
- Develop service and communication strategies for your employees. They need to be well informed and aware of the importance of sustainable food, as well as know exactly where it comes from and who produces it.
- Train your staff to recommend sustainable dishes (especially for à la carte restaurants but also for buffets).
- Especially during the vacations, guests want to enjoy their meal in an appropriate environment. Creating a pleasant dining atmosphere contributes to a sense of well-being:
- Decorate the tables accordingly.
- Place essential information about your sustainable offerings at each table.
- Present information on raw ingredients next to specific dishes, e.g. visuals on local tomatoes next to spaghetti with tomato sauce. This will create an understanding on the part of the guests of the origin of the food used. Pay attention to the recyclability of raw ingredients.
- Menus with special sustainable dishes and drinks create an extraordinary culinary on-site experience that will be remembered and gladly passed on to friends in the form of stories.
